Ways to serve lobster

Nothing could be more delicious than the very simple ways of cooking lobster - by boiling, and serving either hot or cold, or by broiling (grilling).

Hot boiled lobster can be served with melted butter, hollandaise or a cream sauce. Cut in half lengthways, crack the claws before serving and serve with lemon wedges.

If you're going to serve the lobster cold, let it cool in the cooking liquid (the cooking liquid can either be salty water or court-boullion - see the link above for more details on this), before draining and preparing.

If you're serving the lobster with mayonnaise, mix the coral (eggs - if the lobster was a female) with the mayonnaise which will impart its wonderful colour to it.

(In the case of home-made mayonnaise, pound the coral with the egg yolks before you start incorporating the olive oil.)

Hot broiled (grilled) lobster can be brushed with (garlic) butter during cooking and then served with lemon and parsley.

As well as these simple and delicious ways to serve lobster, there are some far fancier traditional recipes, such as Lobster Newburg, Lobster Thermidor and Lobster Americaine, all of which are very time-consuming to prepare (and sometimes involve heart-stopping quantities of rich ingredients) but are truly worth the time and effort!

How to dress cold boiled lobster

Leave the lobster to cool in the cooking liquid as mentioned above. Remove the meat from the shells and mix with the mayonnaise.  

When you're removing the meat you will want to discard the gritty part from just behind the mouth (which is the stomach sac) and the intestine which runs down the tail. However leave the coral (eggs - if female) and the yellowy-green liver ('tomalley') which is delicious.

Use the head and any salvageable parts of the shell to decorate the platter and arrange with lettuce leaves, tomatoes, lemon wedges, stuffed eggs, and whatever takes your fancy.

Serve with mayonnaise mixed with the coral (see above).
